Parmesan Crusted Tilapia with Roasted Asparagus and Tomato Mozzarella Salad

 

This is one of my favorite meals to have. The light delicate texture of the tilapia with the tomato salad and asparagus just makes this whole dish filling and delicious!

 

3 Whole peices of tilapia
Panko bread crumbs

Garlic powder

Onion powder

Dill

Paprika

Salt

Pepper

Egg

 

In a shallow bowl mix all the dry ingredients and the grated parmesan cheese. Dip each piece of tilapia in egg then coat with bread crumb mixture.

Fry in a pan with some olive oil flip when each side is golden brown about 4 minutes each side.

 

Tomato Salad:

Cherry tomatoes

Mozzarella cheese balls

Pitted Kalamata olives

Olive oil

Fresh basil

Salt and pepper

Balsamic vinegar

Place all ingredients in a bowl except the basil. Chop the basil into small pieces then add to the rest of the ingredients and mix well.

 

Roasted asparagus:

Clean and cut asparagus add olive oil salt and pepper and roast in a 400 oven.
