How can cooking during the Summer feel like such a hassle. In our Post Partum Healthy Living Facebook group this week we shared our favorite simple suppers. There were some great ideas, like omelets cottage cheese and vegetables, everything on the grill and cold salmon or baked breaded chicken over greens.
Here is one of my favorite simple summer suppers. I hope they keep you outside longer, laughing louder and living that healthy lifestyle not just spending your life cooking it.
Corn and Spinach Salad with Lamb Kebabs
(even better with grilled corn like above)
2 Cups frozen corn kernels
6 Cups washed baby spinach
2 bell peppers diced
1 purple onion dice
1 Tablespoon apple cider vinegar
1 tsp honey
1 tsp olive oil
salt and pepper to taste
500g ground lean lamb
1 Tablespoon Chopped mint
1 Tablespoon Chopped parsley
1 Tablespoon Ground almonds
salt and pepper
Mix the kebab ingredients together form into patties and broil at 220 C 500 F for 7 minutes
serve over the yummy salad. Drizzle some tehina if you like over the top and garnish with mint.
