Are you low on Energy post pregnancy? I have had days when I am nursing and sleepless and all I want is SUGAR. Good carbs can help you in the short term without compromising your energy in the long run.
Two top fruit non-recipes
My favorite easy and low fuss carbohydrate is fruit. It needs nothing. If you want to spice it up just and cinnamon and almonds to a cored and halved apple and microwave for 1 minute. Or try the same technique with a pear and 3 chocolate chips int he center of each core, superb.
I have no patience for high maintenance food for every day occasions, but these foods look spectacular which helps me to feel more satisfied by what I am eating in a proper portion.
Two top Carbohydrate pairings
My go to comfort carbohydrate pairings are buckwheat with sweet potato and millet with sauteed onions. If you follow Lily's Kitchen's Menu's, you know you have seen them before. To make them more simply at home, you prepare both the buckwheat and millet just like rice, with a 2:1 water ratio. (They are both freezable cooked as well just make sure you take all of the air out of the freezer bag)
Then I add roasted sweet potato cubes tot he buckwheat.
Sweet Potato: Cut 1 large sweet potato and cinnamon with 1tsp of olive oil and kosher salt and red pepper flakes. Makes 2 servings and is great leftover on salad.
Sauteed Onions: When I saute i onion I like to sweat 3 onions in 1 tsp of olive oil over a low flame until the get melty and slick. then I turn up the heat and finish them off to golden brown. I love a pinch of nutmeg with the salt and pepper to make them shine.
Don't forget the Protein from yesterday's post. Tofu is a great easy and fast protein for both dishes. I recommend cumin and olive oil in a hot pan with kosher salt.
