The Pink Lover's Salmon

Are you guys in love with the single color palate food trend? Where all the foods are yellow or red or white? I am not quite in love with it yet, so I decided to put my own spin on it with this gradiated pink salmon with pink grapefruit and red chili. The health coach in me had to add some greenery for fun and flavor. I chose cilantro and parsley to freshen up the dish.

Pink Lover's Salmon
Ingredients
2 lbs (1kilo) Salmon fillets
1 large pink sweet grapefruit
1 red chili seeded
1 handful parsley/cilantro
Fresh sea salt pink Himalayan
Marinate overnight the salmon in the zest and juice of half of the grapefruit and herbs.
Slice the other half of the grapefruit and cover the fillets. Sprinkle extra herbs over the top.
Preheat the oven to 350F 180 C and bake until almost set around 15 minutes.
Then turn up the heat to 400F or 200C and finish it off for 3-5 minutes. Cooking time can change based on your oven. I use the convection setting.

Moroccan salmon. Roast. Veggies for 45 mins ( pot, carrots, peppers, Tom, garlic) in the oven, then put salmon on top and add tomato paste, paprika, coriander and olive oil.
