Don't be sick of hearing from me yet, This past week we had a chicken soup conference in my free group on fun healthy soups. Did you know that adding a lemon, or thumb of ginger to your soup can add a ton of flavor? Just remember to fish them both out before serving. We also discussed the pros and cons or whole chicken versus just bones for making stock.
Don't worry if you love traditional soups, you can keep making it just how you like, but we'd love to know your secret ingredient. I got up to all kinds of fun this week and created some brand new salad recipes. Lentil Lime Salad
Prep Time 5 minutes
Total Time 5 minutes
Servings 1 serving
1 cup cooked green lentils (see Lentils recipe pg. XX)
1 medium carrot , shredded
2 cups finely chopped fresh cilantro
1½ tsp . sesame oil
2 mejudal dates chopped
2 Tbsp . fresh lime juice
Himalayan salt (to taste; optional)
¼ tsp . ground cumin (to taste; optional)
Herbal seasoning blend (to taste; optional)
1/2 cup chopped mint
Combine lentils, carrot, cilantro, chopped dates, oil, lime juice, , salt (if desired), cumin (if desired), and seasoning blend (if desired) to lentils; toss gently to blend.
Let salad marinate, covered, in refrigerator for 2 hours before serving.
