Who can resist peanut butter and chocolate? (Answer: No one.) It’s a magical combination that hits all the right flavor notes, even if you don’t have a sweet tooth.

I made them and Loved them on my Refeed day, My kids stole the rest, and if my Gluten free kids approve, you know its good. These are so much better for you than than the standard Passover desserts we see around, and you can sub almond butter for a peanut allergy to.
*You can also melt the chocolate in the microwave. Place morsels and oil in microwave-safe container. Microwave on 50 percent power for 30 seconds; stir. Microwave for an additional 30 to 45 seconds or until just melted. Do not overcook.
*To prevent the balls from sticking to your hands when you roll them, lightly coat your hands with nonstick cooking spray.

Peanut Butter Inspired by The Kitchn
Ingredients: 2 cups raw peanuts, no salt or oil added ¼ tsp. sea salt (optional)
Preparation: 1. Using a small food processor, pulse the peanuts until chopped. 2. Run the food processor for 1 minute. Using a spatula (or large spoon if that’s all you have), stop and scrape down the sides and bottom. The mixture will look dry. 3. Run the food processor for 1 minute. Stop and scrape the sides and bottom. It might start to come together in a ball at this point. 4. Run the food processor for 1 minute. Stop and scrape down the sides and bottom. It should look like traditional peanut butter at this point. 5. Add sea salt to mixture if using. 6. Run the food processor for 1 final minute. Scrape the mixture into a storage container and place it in the fridge. It should keep for several weeks.
