3 Lentil Soup
Ingredients
1 Tablespoon olive oil
1 onion
2 cloves garlic
2 carrots
1 zuchinni
1/3 cup green lentils
1/3 cup mung beans
1/3 cup black lentils
4-6 Cups boiling water
salt/pepper to taste
1 Tablespoon cumin
1 tsp coriander
1/2 tsp cinnamon
fresh parsley
Preparation
Saute vegetables. Add lentils, seasoning, and boiling water and
simmer for 30-40 minutes until all the lentils are soft.
Thin to desired texture and adjust seasonings to taste.
