Strawberry Amaranth Salad

 

Ingredients

1 Cup uncooked amaranth

1 Pint strawberries

1/3 cup toasted shelled pistachioes

1 green onion

4 Cups baby spinach or kale

 

Dressing

Himalayan salt to taste

1/2tbsp tahini (I use salted tahini for dressings and sauces)

1tbsp lemon juice

water to thin

 

Preparation

Cook the amaranth according to the instructions on the package. Mix with the remaining ingredients. Mix the dressing, add to the salad and serve.
