Meatballs in Marinara Sauce

 

For Meatballs

 

1kg Low Fat, Ground Meat

1 Egg

½ Cup Gluten Free Breadcrumbs or Ground Almonds

Zest of 1 Lemon

1 Handful Chopped Parsley

1 Onion, Grated

 

For the Sauce

 

2 800g Cans of Crushed Tomatoes plus 1 empty can of water or white wine

1 Tbsp Olive Oil

1 Onion

2 Cloves of Garlic

2 Carrots

1 tsp Dried Oregano

1 tsp Dried Basil

1 tsp Dried Rosemary

Salt & Pepper to Taste

 

Mix all the ingredients for the meatballs in a large bowl. Roll into balls about 2 inches in diameter. Drizzle with a little olive oil (optional) and bake in the oven at 375F/185C for 15 minutes.

While the meatballs are baking, simmer all of the sauce ingredients together in 1 pot for 25 minutes. Once cooked, pour the meatballs with their juices into the pot and serve with your favorite pasta, rice or a healthier low carb option of spiralized or julienne zucchini.
