Mini Cheesecakes, 2 ways


No-Bake Mini Cheesecakes

2 Cups of 3% Ricotta

1 Cup 9% Sour Cream

1 Package Pudding mix

2 T plain Yogurt

1 t vanilla

1 T lemon zest

You can use any flavor extract or sub in cookie crumbs for lots of fun flavors.

 

Baked Mini Cheesecakes

2 Cups 3% Ricotta

1 Cup 9% sour Cream

2 eggs + 3 whites

1 Cup Raw sugar or 3/4 Cup Honey

2 Tablespoons of flour

1 teaspoon vanilla

1 T lemon zest

Bake at 350 in a water bath until just set, then let them cool and chill for an hour.
