Wheat Berry Salad

 

Ingredients

1 cup uncooked wheat berries

3 cups boiling water

pinch of salt

1 tablespoon dried unsweetned cranberries

1 avocado cubed

1 Tablespoon olive oil

salt pepper

juice and zest of 1 orange

 

Preparation 

Simmer together the Wheat Berries, water and salt until done like rice 50 minutes. Mix with the remaining ingredients and serve.
