Broiled Salmon with Lemon

 

Serve chilled or warm with steamed broccoli.
Healthy bonus points: Omega 3 fats and iron in the parsley/ broccoli

 

Ingredients

1 kilo salmon fillet

2 small lemons

1 teaspoon coarse salt

Sprinkle fresh ground pepper

1 handful of parsley

 

Directions

Pre heat the oven to 250c or broil

Squeeze one lemon over the salmon on the broiling pan

Then add the salt and pepper

Sprinkle some parsley over the fish and put the remaining leaves under the fillet.

Slice the remaining lemon on the side of the fish

Broil uncovered for 7-10 minutes until firm to the touch in the middle of the fillet
