Fast Red Lentil Soup

 

This fast red lentil soup recipe is a perfect alternative to take-out after a hard day.

 

Ingredients

1 Tablespoon Olive Oil

1 Onion chopped

3 Garlic cloves mashed and chopped

3 Tomatoes diced

1 Tablespoon Sweet Paprika

1 Teaspoon Chili Powder

1 Tablespoon Cumin

1 Teaspoon Coriander

Juice of 1 Lemon

1/4 cup brown rice

10 cups of vegetable stock

1/4 cup bulgur

1/2 cup red lentils

Salt and pepper

1 small handful of Fresh mint and more for garnish

 

Directions

1. In a large pot heat the Olive oil and Sauté the vegetables.

2. Add the seasonings and stir until the juices of the lemon and tomatoes are boiling.

3. Add the lentils and rice and stir to coat. Then add the vegetable stock and bring to a boil. Cook for 20 minutes on a low flame.

4. Add the Bulgur and mint and cook for another 10 minutes.

Garnish with more mint and serve.
