Lemon Energy Balls
These light and refreshing bites will fill you up and slim you down. With mood boosting healthy fats and an easy no bake recipe these Lemon Energy balls are a summer no brainer.
Makes 20 servings
Ingredients
3 Cups quick cook oats or whole oats
1 Cup shredded unsweetened coconut
1/2 Cup Chia seeds
3 lemons, juice and zest
1/3 Cup almond butter (add up to another 2 Tablespoons if recipe is to dry)
1/4 Cup coconut oil
1/3 Cup Natural honey (to taste)
pinch salt
Preperation
Mix the dry ingredients in a large bowl
add the lemon zest and juice
add the coconut oil
add the honey
add the almond butter
Roll and freeze on a baking sheet.
Then move into a container. Keep frozen for up to 6 months.
