Lemon Broccoli

 

Serves 4-6

 

Ingredients

1 Kilo broccoli (fresh or frozen and defrosted)

1 Tablespoon olive oil

1 Lemon zested

Coarse saltr

Red pepper flakes

5 Stalks fresh thyme; 3 with stalks removed and the remaining two to be removed after cooking.

 

Directions:

Preheat oven to 200 C 400 F

1. Defrost frozen broccoli with boiling water for 1 minute or clean, wash and cut fresh broccoli into florets.

2. Drizzle olive oil over the broccoli in a baking pan

3. Add kosher salt and zested lemon (red pepper flakes to taste begin with a pinch)

Roast until the broccoli cooked but firm and begins to brown 10-12 minutes.
