Lentil & Zucchini Salad



1 Cup mixed lentils or green lentils

2 cups boiling water

1 tsp meatballs spice mix

salt pepper

1 tsp olive oil

4 cups of zuchinni, cubed and steamed



1 tsp fresh parsley

1 tsp fresh mint

1 tsp fresh dill

1 garlic clove smashed and diced

1 lemon juice and zest

1 Tablespoon olive oil



Cook the lentils with the seasoning according to the package instructions. While the lentils are cooking mix the dressing ingredients together. Mix all the ingredients together.
