Superfood Miso Soup

 

Miso soup is the chicken soup of the Asian world. This cure all is perfect for cold weather to boost immunity and offer a vegan option for those who miss the homey, hearty feel of chicken soup.

 

Ingredients

1/3 package of miso paste

6/8 Cups boiling water

1 garlic clove

1 inch fresh grated ginger

1 pint shitake or portabello mushrooms

1 red bell peper

1 yellow bell peper

1 3OO gm extra firm tofu block cubed

1 Cup shelled Edamame

1 Tblsp soy sauce regular or GF

optional whole wheat egg pasta or GF rice noodles

 

Preparation

Start with the miso paste garlic and ginger, and satue for 1 minute, add the vegetables and continue for 3 minutes.

Then add the boiling water and tofu cubes.

Boil for 15/25 minutes till the vegetables are soft, the add the noodles and simmer for an additional 5 minutes.
