Red Lentil Almond Burgers
Ingredients
2 cups of dry red lentils covered with water until cooked
1 cup of raw almonds, pulsed into a rough meal
1/2 cup of raw sunflower seeds
1 carrot, shredded
1 sweet potato shredded
1 tablespoon olive oil
1 tablespoon chia seeds
1/4 cup of water
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon coriander
Black pepper to taste
2 tablespoons soy sauce
1-2 tbsp honey
Preparation
Steam the shredded carrot and sweet potato in microwave 2 min. Mix the chia seeds in water and leave to gel. Then mix all the ingredients together in food processor until a chunky dough forms. If its dry add a little water, if its too wet a little more almond meal -
dont make it too dry as it will fall apart in the oven. Bake at 200 C for 20 minutes on an olied sheet pan. If you wish to freeze spare burgers, do so before baking.
