Red Lentil Burgers


This recipe is always a winner in my cooking classes and will transform a lentil skeptic into a supporter.



1.5 Cups of Red Lentils

2 tablespoons Olive Oil

3 carrots/small sweet potato diced

1 onion diced

3 cloves of garlic

1 handful of cilantro

1 teaspoon of lemon zest

1 cup oat bran (covered in boiling water)

1 tablespoon kosher salt

Fresh ground pepper

2 teaspoons cumin

Sprinkle cayenne pepper to taste

2 eggs



1. Chop vegetables and herbs and prepare the oat bran. Put the lentils and vegetables into a pot and cover with water.

2. Cook 5-10 minutes until the vegetables are soft. Strain the mixture well and pour into a mixing bowl.

3. Add remaining ingredients and mix well. Let the mixture sit for a few minutes while you heat the oil.

4. Bake the mixture in a kugel or fry as patties in the olive oil until golden brown on both sides.
