Rotini Cheesey Bake,3 ways
This makes a great family casserole and is a great vehicle to introduce your family to whole wheat pasta.
1 bag of small whole wheat rotini
250 gm of 3% cottage cheese
1 Cup of 9% shredded cheese
2 eggs + 2 whites
¼ Cup shredded parmesan cheese
250 white cheese (swap ricotta)
Preheat oven to 185 C / 350 F
1. Boil the pasta very al dente in salted water as per package instructions (5 minutes usually does it)
2. Add the cottage cheese, white cheese and eggs to the pasta.
3. Pour into a glass baking dish and cover with the shredded cheese and parmesan cheese.
Bake until golden brown and the egg is completely cooked, no moving around.
Bonus additions / options:
2 Cubes frozen spinach, defrosted and squeezed
1 Can of tuna
1 Cup marinara sauce
