Split Pea and Quinoa Soup with Broccoli and Cauliflower

 

1 Onion

3 Cloves of Garlic

1 Bag of Frozen Broccoli Cauliflower Floret Mix

500g Split Peas

1 Cup Uncooked, Rinsed Quiona

3 Carrots, Chopped

1 Tbsp Hwaij Soup Seasoning

½ Tbsp Sweet Paprika

8-10 cups boiling water or stock

Zest & Juice of 1 Lemon

1 Handful Fresh Parsley or Mint


Put all the ingredients into a pan. Boil and simmer for one hour until all the ingredients are soft. Check for Salt & Pepper and add to taste. Puree and Enjoy.
