Knock Your Sock’s Off Split Pea Soup 

 

This recipe wowed the guys in our family and is a favorite to give as a gift for new mom.

 

Ingredients

 

2 tablespoons of olive oil

1 onion chopped

2 carrots diced

3 large stalks of celery diced

4 cloves of garlic chopped

1/2 cup of split peas

1/3 cup of millet, quinoa or brown rice uncooked

10 cups of water/ vegetable stock

1 tablespoon of cumin

1 tablespoon of sweet paprika

2 tablespoons of hawaij soup spice

2 bay leaves

Salt and pepper

2 tablespoons of lemon juice

2 cups of frozen peas

 

Directions

1. Heat the oil in a large pot and add the celery, onion and carrot. Season with salt and pepper and stir till they begin to soften. 5 min.

2. Add the garlic, split peas and millet and stir in for 1 minute and add the seasonings.

3. Fill the pot with the water ( I prefer to start with 2 cups of boiling water to de glaze the bottom on the pot) then add the rest of the water. Bring the water to a boil and then set on a low flame. 40min – 1 hour until split peas fall apart. add additional salt / pepper to taste

4. Add the lemon juice and frozen peas, let it boil for 3 more minutes and then serve with cilantro or parsley.
