Tomato Lentil Soup

 

Ingredients 
1 Onion
1 Garlic Clove (add more if you love garlic)
Olive Oil
3 Carrots
1 Bag Frozen Green Lentils
.5 Kilo Salmon Raw Chopped not ground
250 gm Crushed Tomatoes
1 T Tomato Paste
2 tsp Cumin
2 tsp Dried Coriander
1 Cup White Wine (pour a glass for you)
Cilantro 
Lemon Juice
1 T Hawiaj spice for soup not coffee

 

Preparation
In a large pot, add T regular olive oil, 1 onion chopped, 1 garlic clove chopped, 3 carrots diced 1 bag frozen green lentils and 500 gm chopped salmon. Add 1 T cumin, 1 tsp coriander, 1 T hawiaj for soup. Add1 250 gm can container crushed tomatoes, 1 T tomato paste and 1 Cup white wine. Add boiling water or stock to cover plus 1 inch. Simmer for 30 minutes until carrots are softer and fish is cooked through. serve with fresh cilantro and lemon juice.
