White Bean Pumpkin Stew



2 T olive oil

2 Turnips cubed

4 kohlrabi cubed

4 carrots Chopped

4 Cups pumpkin cubed

3 stalks celery chopped

1 Onion

4 Cups frozen white beans

4 cloves garlic

1 inch garlic

1 handful, parsley, cilantro, thyme, salt, pepper

2 Cups Cooked Quinoa



Sauté the vegetables in the olive oil, Add 6 cups water or stock till just covered. Simmer for 45 minutes. Serve with the cooked quinoa, more fresh herbs and squeeze of fresh lemon
